My Favorite Mexican Chicken Casserole

Ingredients
1.5 cups crushed lite Tostitos1 lb shredded cooked chicken meat (breast)1 can (15.5 oz) garbanzo beans, drained1 can (15.5 oz) kidney beans, drained1 can (8 oz) tomato sauce1 cup prepared salsa1 cup chopped red onion1/4 cup chopped fresh cilantro leaves1 tbsp minced garlicsalt and pepper, to taste6 oz reduced fat shredded 4-cheese mexican cheese6 oz fat-free shredded cheddar cheese
Directions
Makes 8 servings

Prehat oven to 350 degrees (F). Grease a 13x9 inch baking dish, then scatter the crushed tortilla chips evenly on the bottom.

Combine chicken, beans, tomato sauce, salsa, onion, cilantro, garlic, salt & pepper in a bowl. Place half the mixture evenly in a baking dish. Combine the cheeses, then sprinkle half over the mixture.

Cover with the remaining half of the chicken mixture and sprinkle the remaining cheese over the top.

Bake for 30 minutes. Let stand for 5 minutes before serving.

Can garnish with:
-diced ripe tomatoes
-sour cream
-fresh cilantro

    The only thing I would do different when I prepare the recipe is to saute the onion before combining with other ingredients. The one half hour of baking did not cook the onions and they were crunchy. My husband was not happy. :( I tried to rate it 3 stars but the thing wouldn't work! - 1/20/12

    Very Good and quick to make. I used stone-ground corn tortillas &tore them up to create a layer on the bottom. The salsa adds a kick to the recipe - like it hot - use the hot salsa. With mild salsa and the corn tortillas it was the perfect blend of flavors. - 1/5/10
