Ingredients
1/2 cup unsalted butter, softened1 cup sugar1/4 tsp. baking soda1/4 tsp. cream of tartar1 egg1/2 tsp. vanilla extract1 1/2 cups flour2 tbsp. sugar3/4 tsp. cinnamon
Directions
In mixing bowl, beat butter on medium speed for 30 seconds. Add 1 cup sugar, baking soda, and cream of tartar. Beat until combined. Beat in egg and vanilla. Beat in flour until unmixable, then add the rest by hand. Chill for 1 hour.

Preheat oven to 375 degrees. Combine sugar and cinnamon. Shape dough into 1-inch balls and roll in the cinnamon/sugar mixture. Bake 10-11 minutes.
