Ingredients
1 16 oz. bag dried split peas8 oz. ham, cubed3/4 cup chopped celery3/4 cup chopped onion3/4 cup sliced baby carrots6 cups hot water
Directions
Trim and cube the ham. Put in a bowl and cover with cold water. Refrigerate for about an hour to remove some of the fat and sodium. Sort and wash peas. Put them in the slow cooker with 6 cups hot water. Add chopped veggies. You can add a bay leaf and ground black pepper to taste if desired. When ham has finished soaking, drain well and add to soup. Cook on high until boiling, reduce to low and stir. It can sit in the slow cooker all day or be eaten when peas and veggies are tender. Serves 8 - 10.
