Oatmeal Cottage Cheese Pancakes with banana

Ingredients
Ingredients:Cottage Cheese, 2% Milkfat, 2 cup (not packed) Egg, fresh, 8 extra large Vanilla Extract, 2 tsp Banana, fresh, 2 medium (7" to 7-7/8" long) Baking Powder, 2 tsp Oats, 2 cup Combine all ingredients except oats in a blender. Blend until smooth. Add oats. (Note, I wanted my pancakes a little smoother so I ground my oats a little first). Blend on pulse just until oats are mixed well. Do not over blend. Let sit for a few minutes to thicken.
Directions
Makes 24 4 inch pancakes. I cook my pancakes on a cast iron frying pan set to 4(electric). Spray with cooking spray and pour 4 inch circles onto your pan. Cook for about 1 to 2 minutes per side. Serve with your favorite topping. I use 2 cups pureed strawberries with 4 T agave to make 2 cups of topping. I used 1/2 cup per 4 pancakes. Yum-O

    Forgive me if I'm wrong but isn't cottage cheese made of milk? Therefore not lactose free. Or is it that the enzymes it takes to make cottage cheese eat up the lactose? - 1/14/11

    I found these to be pretty good, added blueberries, not to the blender, fold in. Very good. Putting cinnamon in the other half of batter. - 8/24/15

    We liked these a lot, but next time I will add a tiny pinch of salt. I made 1/4 recipe for two of us. Next time I'll make 1/3. Has anyone tired adding some cinnamon? We have the Low-carb almond meal pancakes almost every weekend, and these are a nice high protein change. - 1/25/14

    This is not a "Lactose Free" recipe, unless you swap cheese with a lactose free substitute which is not available for cottage cheese as far as I know.
