Ingredients
eggs, ham, cheese, onion, red pepper, celery, mushrooms
Directions
beat eggs with 1 tsp water, set aside

finely dice vegs except for mushrooms & nuke 30 sec to partially cook but still be crunchy

nuke mushrooms

spray or oil omlette pan. add egg, lifting as it cooks to redistribute uncooked portion.

add vegs, ham and cheese

fold omlette, cook, turn continue cooking til cheese melts
