POTATO, BACON AND SOUR CREAM FRITTATA

Ingredients
4 slices bacon1 large russet potato peeled and cut int 1/2 inch cubes2 cups egg subsiture or 8 eggs1/2 tsp each salt and pepper1/3 cup sour cream1/2 cup grated cheddar cheese4 scallons sliced thin
Directions
in a 12-inch openproof frying pan(or cast iron skillet) cook bacon over medium -low until crspy. Place on a paper towel-lined plate. When cool crumble into 1/4 inch pieces: set aside.
Use 2 tsb olve oil cook potatow in olive oil over medium-high heat until browned and tender 5 min. reove and let cool. In a bowl, beat eggs with salt and pepper add reserve baxon and potato. preheat oven to broil.placing rack 6 niches from heat.
Add eggs mixture.reduce heat to ,and cllo 6 min, Drop in small amounts of sour cream. Top with cheese. Broil for 2 minutes until eggs are set sprinkle with scallons
