FILLING:1 Lb lean ground turkey1 cup chopped onion1 cup chopped green pepper1 clove garlic, minced1/2 tsp oregano1/2 cup water1/8 tsp tabasco sauce1 can (15 ounces) tomato sauce1 envelope (1.5) spaghetti sauce mixPOPOVER BATTER:1 cup 2% milk 1 tbls olive or veg oil1/2 cup egg substitute1 cup flour1/2 tsp salt8 oz slice mozzarella cheese1/2 cup grated parmesan cheeseNOTE: Feel free to add other vegetables such as mushrooms, zucchini, eggplant.
In large skillet, brown the ground turkey. Drain well. Stir in onion, green pepper, garlic, oregano, water, Tabasco sauce, tomato sauce & spaghetti sauce mix; simmer 10 minutes, stirring occasionally. Set aside. In small bowl, combine milk, oil and eggs; beat 1 minute at medium speed. Lightly stir and spoon flour into measuring cup; level off. Add flour and salt; beat 2 minutes at medium speed of mixer or until smooth. Pour hot meat mixture into ungreased 13 in x 9 in pan. Top with sliced cheese. Pour batter over cheese, covering filling completely; sprinkle with Parmesan cheese. Bake at 400 degrees for 25 to 30 minutes or until puffed and deep golden brown. Serve immediately. Yield: 8 servings.
