Chocolate Chipotle Chili

2 cups diced onion3 cups butternut squash1 cup chopped red bell pepper1 teaspoon minced garlic1 1/4 pounds ground turkey breast3 tablespoons brown sugar2 tablespoons ancho chile powder1 tablespoon unsweetened cocoa1 teaspoon ground cumin1/2 teaspoon freshly ground black pepper1/4 teaspoon salt2 (15-ounce) cans pinto beans, rinsed and drained2 (14.5-ounce) cans diced tomatoes, undrained1 (14-ounce) can fat-free, less-sodium chicken broth2 chipotle chiles, canned in adobo sauce, minced2 ounces unsweetened chocolate, chopped1/2 cup light sour creamChopped green onions
Heat a large saucepan over medium-high heat and coat with cooking spray. Add the sausage, squash, onions, bell pepper, and garlic and sautee for about 8 minutes or until vegetables are tender and turkey is cooked through. Add the sugar through the chipotles to the pot and bring to a boil, stirring occasionally. Lower the heat and simmer for 15 minutes. Add *up to* 2 ounces of the chocolate, a little at a time, until you reach your desired consistency and taste
