Healthy Cream of Mushroom Soup with Barley

Ingredients
2 tbsp. olive oil1 sm. onion, finely chopped2 garlic cloves, minced1 ib. mushrooms, sliced2 tbsp. balsamic vinegar1 tbsp. worcestshire sauce4 c. low-sodium chicken broth1/4 c. whole-wheat flour1 c. lowfat milk (1%)Freshly ground black pepper to taste
Directions
Saute onion and garlic in olive oil. Add sliced mushrooms and cook an additional 5 minutes. Add balsamic vinegar and worcestshire sauce. Then add barley and cook for 15 minutes. Add chicken broth and bring to a boil. Cover an simmer for 45 minutes. Whisk flour and milk together, add to soup mixture, stirring constantly. Cook another minute or two. Makes 4 generous portions that will fill you up!
