Southern Spiced Jambalaya

1 can red kidney beans2 cups brown rice, uncooked14 oz diced tomatoes, not drained1 cup corn, frozen or fresh2 small onions, diced1 bell pepper, diced3 cups vegetable broth (with salt)1 bay leaf.5 tsp garlic1 tsp paprika.5 tsp oregano .5 tsp thyme2 tbsp extra virgin olive oil
1. heat oil over medium-high heat
2. add onion and pepper, stir for about three minutes, until soft.
3. add the rest of the ingredients, mix and bring to a boil.
4. reduce to a simmer, cover and simmer for 20-25 minutes (until broth is absorbed and the rice is cooked)
5. add cayenne pepper and/or hot sauce to taste, let rest for 3 minutes, remove bay leaf and serve.
