Cheesy Chicken Enchilada's

3 boneless, skinless chicken breast, cubed1 - pkg. (8oz.) cream cheese, cubed2 - cans (10oz. each) red enchilada sauce1 - bag (8oz.) shredded cheddar cheese1 - bag (8oz.) shredded mozzarella cheese1 - pkg. 8 burrito size tortilla's1/2 cup water
Cube chicken and season to taste. Cook chicken in skillet in water until cooked thru and water is evaporated. Cube cream cheese and add to chiicken. Add one can red sauce to chicken and cheese. Stir consistantly over low/med heat until cheese is well blended. Mixture should look orange when well blended. Warm tortilla shells according to package directions. Fill each tortilla with 1/3 - 1/2 cup chicken mixture. add 1/8 cup of each cheese and 1 tbsp red sauce. Fold in sides of tortilla and roll closed. Place in baking dish seam side down. Once all tortilla's are stuffed and wrapped, drizzle tops with remaining red sauce and top with remaining cheeses. Bake at 375 F. for 15 - 20 minutes or until cheese is melted. Serves 8.
