Curried Squash

Ingredients
2 tbsp oil1 tbsp garlic, minced1-1/2 lb squash, cubed (acorn, butternut)2 carrots, diced1 tbsp ginger, minced2 tbsp curry powder1 cup light coconut milksalt and pepperbrown rice to serve
Directions
First, start brown rice - cook according to packaging.

Place oil, garlic, curry, and ginger in a skillet over medium heat for 4 minutes. Add coconut milk, carrots, and squash, boil, reduce heat and cover, cooking for 15 minutes or until squash and carrots are cooked through. Serve over brown rice.
