Gnocchi with Tomato, Pesto and Artichoke

Ingredients

Roast artichokes and tomatoes. Toss with 1 Tbsp Olive Oil, salt and pepper to heat. Start artichokes first, then tomatoes until both are soft in a 450 degree oven.

Heat 1 tablespoon oil in heavy large pot over medium-high heat. Add chopped onion and minced garlic and sauté until onion is tender, about 7 minutes. Add tomatoes and artichokes. Mix well and simmer if there are any juices. Add pesto; simmer 1 minute longer. Mix in gnocchi and 1/3 cup grated cheese.
