Kaju saathe khichdi pulao (Coconut & Cashew Rice)

gredients:*Canola Oil, 2 1tsp (remove)Onions, raw, 1 small (remove)10 black peppercorns3 cloves3 green cardamom pods, bruised2 bay leavesWhite Rice, long grain, 1.5 cup (remove)*A Taste of Thai LITE Coconut Milk, 1.5 cup (remove)Pepper, Green Bell Pepper, raw, 148 gram (remove)Peas, frozen, .25 cup (remove)Raisins, 20 grams (remove)*Trader Joe's Organic Dry Roasted Cashews, .125 cup (remove)
Heat 1 T Oil and fry onion until golden brown.
Add whole spices and bay leaves and swirl for 1 min.
Add about 1.5C water and bring to boil.
Add the rice to pan along with half the coconut milk and some salt. Return to boil, reduce heat add green pepper & peas.
As soon as liquid has been absorbed, add the rest of the coconut milk. Cover the pan and simmer until the rice is cooked through.
Heat the remaining oil in a smaal saucepan and fry the raisins and cashews for 1 min. Pour them over the rice to garnish. Serve hot.
