Banana Strawberry Bread Mini-Loafs

3/4 cup + 2 T white flour3/4 t baking powder1/4 t baking soda3 T vegetable shortening(I use Crisco Butter Flavor with 0 Grams Trans Fat per serving)1/3 c Splenda for baking1 egg2 med ripe bananas3/4 c sliced strawberries
Preheat oven to 350 degrees F
Grease 6 mini-loaf bread pans
(I use Crisco with Pilsbury Flour No-Stick Spray)
Sift dry ingredients in small bowl.
In large bowl blend shortening, Splenda, egg and bananas well.
Add flour mixture, mix until smooth.
Carefully fold in sliced strawberries.
Pour mixture into greased mini-pans. Cook for 40 minutes.
Makes a nice side to a hot dinner or cold snack. Leftovers can be microwaved and eaten with coffee for a quick and easy to-go breakfast.
