Banana Strawberry Bread Mini-Loafs

Ingredients
3/4 cup + 2 T white flour3/4 t baking powder1/4 t baking soda3 T vegetable shortening(I use Crisco Butter Flavor with 0 Grams Trans Fat per serving)1/3 c Splenda for baking1 egg2 med ripe bananas3/4 c sliced strawberries
Directions
Preheat oven to 350 degrees F
Grease 6 mini-loaf bread pans
(I use Crisco with Pilsbury Flour No-Stick Spray)

Sift dry ingredients in small bowl.
In large bowl blend shortening, Splenda, egg and bananas well.
Add flour mixture, mix until smooth.
Carefully fold in sliced strawberries.

Pour mixture into greased mini-pans. Cook for 40 minutes.

Makes a nice side to a hot dinner or cold snack. Leftovers can be microwaved and eaten with coffee for a quick and easy to-go breakfast.

    I used sugar and not sugar substitute. I made muffins and they were an awesome texture and flavor. I plan to make these again and will likely use this base recipe for other things as well including zucchini bread. - 3/19/11
