White Chicken Chili

Ingredients
1 lb skinless boneless chicken4 T. Olive Oil1 Onion finely diced3 cloves garlic, minced1 red bell pepper, chopped1 yellow bell pepper, chopped1 T. Chili Powder1 t. cumin1 t. dried oregano5 cups chicken broth2 (15 oz )cans canellini beans1 (4 oz) can green chiliesor 1 can rotel tomatoes with green chillies also for flavor)1/4 cup cornmeal (optional)Salt and pepper to tadste1/4 tsp hot pepper sauce
Directions
Chicken may be cooked in beer the day ahead.(not included in calorie count..

In a large stockpot, saute ollive oil, onion, garlic red and yellow peppers until vegetables start to soften. Add chili powder, cumin and oregano and cook on medium for 5-10 minutes
(Or simmer 1 hour, or use crockpot. Adjust seasoning.
