Smoky Shrimp and Corn Soup

Ingredients
2 tsp Olive Oil1 Large Red Onion, thinly siced2 Celery Stalks with leaves, sliced2 Tbsp all-purpose flour3/4 tsp paprika2 cups fat free half and half1 1/2 cups of corn kernals (I use frozen corn)1/4 tsp salt1/2 lb medium shrimp, peeled and deveined (I use frozen as well)
Directions
Makes 4 servings (about one cup each)

1. Heat oil in large saucepan over medium heat. Add onion and celery, stirring occasionally, until softened, usually about 5 minutes. (**I don't usually put the celery in and it tastes just fine without it!)
2. Add Flour and Paprika, stirring constantly for one minute.
3. Remove saucepan from heat. Add half and half, whisking until smooth. (Isn't half and half already smooth? Just sayin.)
4. Add corn and salt. Cook over medium heat, stirring constantly for about 3 minutes, until soup is thickened.
5. Add shrimp, stirring often for about 3-5 minutes, until shrimp turn opaque in the center. (If you want, you can steam the shrimp separately and then add it)
