Barley and Mushroom Soup

Ingredients
64oz. beef broth1 large carrot1 medium onion20 oz. mushrooms1 large celery stalkSalt and pepper to taste and fresh parsley .
Directions
Dice all ingredients by hand, or use food processor, into small pieces and then add to beef broth. Add the barley. Bring to a boil and then lower heat and simmer for 60 minutes or until barley is cooked.Add parsley for decoration on top when serving.
