Butternut Squash Pancakes

Ingredients
2 cups butternut squash, steamed and pureed1 cup whole wheat flour2 eggs1 tsp baking powder.5 tsp cinnamon.5 tsp nutmeg1 tsp vanilla extract1 tsp brown sugar4 tsp granulated sugar.25 cup chopped walnutsButter for cooking.
Directions
Steam and puree the squash. Let cool.

Sift dry ingredients together.

Add vanilla extract and eggs to squash puree.

Add dry ingredients and stir until just mixed.

Add walnuts, if desired.

Fry in butter! Makes approximately ten 3-inch pancakes. Delish!
