Red Pepper Omelette

Ingredients
2 eggs - beaten 1/4 to1/3 cup - shredded provolone or cheese of your choice1/2 cup sweet red pepper 1 tsp margarine 2 cloves crushed garlic2 tbsp raw onionssalt and pepper to taste (optional)
Directions
In seperate bowl, Beat eggs, add red pepper and shredded cheese - salt and pepper to taste

Heat margarine in medium skillet until sizzling. Add garlic and onion - cook until onion is translucent.

Add egg mixture to pan, either flip like a true omelette or scramble, cook thoroughly and enjoy!
