Sausage and Sweet Potato Risotto

Ingredients

1 Tbsp olive oil3 Italian Turkey Sausage links, casings removed1 onion, chopped2 cloves garlic minced1.5 c sweet potato, cubed1.5 c aborio rice1/2 c white wine4.5 c chicken stock1/2 c grated Parmesan Cheese1 tbsp fresh thyme
Brown sausage in pot over med-high heat and transfer to bowl
Add olive oil to pot and reduce heat to medium
Saute onion and garlic until soft
Add rice, stir to coat
Add sweet potato and cook for 1 minute
Add wine and stir until absorbed
Add warmed chicken stock 1/2 cup at a time. Stirring continuously.
Once all stock is incorporated add cooked sausage and stir until heated through.
Add cheese and thyme and stir to incorporate.
