2 large eggs2 egg whites1 large scallion, chopped1 tomato, chopped1 tbsp chives, chopped2 oz. light cheddar cheese or any other low calorie cheese, shreddedcooking spray
Blend the egg whites and eggs.
Pour egg/egg white blend into a greased and heated frying pan.
Add scallion, tomato, chives, and cheddar to eggs.
At this point, you can either scramble them, or make the into an omlette.
