Tortilla soup

Ingredients
Vegetable or Chicken brothOnion, dicedZucchini, dicedSoy ChorizoCanned Black Beans, drainedFrozen Sweet corn, thawedCanned Diced Tomatoes (fire-roasted, optional)Top with extra: Crushed tortilla chips, fresh , lime, sour cream (or plain greek yogurt), avocado, cheese (optional)
Directions
Saute onion in olive oil in bottom of pan, add zucchini and stir another minute. Add broth, soy chorizo, beans, corn and diced tomatoes. Bring to a simmer for 15-20 mins. Top with plenty of extras.
