Peanut Soup (Flat Belly Diet)

Ingredients
1 tsp olive oil1/4 cup celery, diced (about 1 stalk)2 tbsp onion, diced1 clove garlic, minced1 cup low sodium vegetable broth2 tbsp peanut butter1/2 tsp ginger, mincedpinch crushed red pepper1 tbsp lowfat plain greek yogurt2 tbsp cilantro, minced
Directions
in a small saucepan, heat oil over medium heat. Saute celery and onion until tender; about 4 minutes. Add garlic, cook 30 seconds. Add broth and bring to a boil. Add peanut butter, ginger, red pepper, and yogurt. Stir until peanut butter melts and everything is combined. Stir in cilantro.

Makes 1 serving.
