Black Bean soup

Ingredients
2 Tbsp olive oilDry black beans, rinsed 2 cup (16 oz)Onions, raw, 2 medium (2-1/2" dia), dicedCelery, raw, 4 stalk, large (11"-12" long), slicedCarrots, raw, 1.5 cup, grated Garlic, 3 tsp, mincedCumin, 1 tbsp Chicken Broth, 6 cup (8 fl oz) Chopped Green Chili Peppers, canned, .75 cup Chipotles in adobo, minced, 2 Tbsp.
Directions
In nonstick pan heat olive oil until shimmering. Add chopped veggies. Cook 10 minutes on low medium until softened. Add garlic, chipotles & cumin and cook until fragrant. Add veggies, beans, broth & green chilis to crock pot and cook on low for 8-10 hours. Serve with sour cream (or Fage) and cilantro. Enjoy!
