Batter * Flour, white, 1.25 cup * Granulated Sugar, .5 cup * Baking Powder, .5 tsp * Baking Soda, .5 tsp * Cinnamon, ground, .5 tsp * Salt, .125 tsp * Milk, nonfat, .6667 cup * Vanilla Extract, .5 tsp * Quick Eggs, 0.25 cup * Mott's Unsweetened Applesauce, 3 tbsp * Schnucks Frozen Blueberries, 1 cup Topping: * I Can't Believe It's Not Butter, 2 tsp * Brown Sugar, 2tbsp packed * *Flour, white, 1 tbsp * Cinnamon, ground, .25 tsp
Lightly grease and flour a 9x1-inch round baking pan. Set aside. In a large mixing bowl stir together the 1.25 cups flour, granulated sugar, baking powder, baking soda, the 1/2 tsp cinnamon, and the salt. In a small mixing bowl stir together the milk, egg product, applesauce and vanilla. Add to dry ingredients. Stir till smooth. Pour batter into prepared pan. Sprinkle berries over batter.
In a small bowl combine the brown sugar, the 1 tbsp flour, the 1/4 tsp cinnamon, and the margarine. Sprinkle over top of berries. Bake in a 350 degree oven for 30-35 minutes or until a toothpick inserted near the center comes out clean. To serve, cut into wedges. Serve warm.
