blue berry muffin

Ingredients
1/3 cup soy flour1 cup brown sugar1/3 cup corn meal 1/2 cup whole wheat flour1/2 cup regular flour3/4 cup bulgar wheat, soaked overnight in water to cover1/4 cup wheat germ2 scoops (60grams) soy protein3/4 tsp salt1 tsp salt 1 cup almonds,ground2 large eggs3/4 cup yogurt3/4 cup buttermilk1 tbs. vanilla extract1/3 cup olive oil5 cups fresh cranberries or 3 cups dried cherrries
Directions
Mix dry ingredients and wet ingredients separately, then combine. After combining, add pre-soacked bulgar wheat, mix and add cranberries or cherries, depending on your choice, and mix. Fill muffin cups approximately 3/4 full.
Bake for 25 minutes at 350 degrees. Be sure to grease muffin cups if you are not using paper muffin cups. Yield 20 muffins
