yam, pumkin and ginger soup

Ingredients
2 yams, chopped1 large piece of pumpkin, chopped1 onion chopped1 tin coconut milk1 thumb size piece of fresh ginger choppedchicken broth to cover veggiessqeeze of lemon juice
Directions
makes 12 1 cup portions
Brown the onions, yams, pumpkin with a little oil,about 5mins. Add chicken broth to cover veggies, add ginger and cook for 20 minutes till soft. Whizz it up with hand blender, add coconut milk, a little lemon juice, salt and pepper to taste. Let it simmer for another 5-10 minutes.
