1.5 lbs small potatoes (I used Klamath pearl potatoes but you can use any other kind of small potatoes)2 cloves of garlic2 tbsp extra virgin olive oil2 tbsp lemon juice1 tbsp fresh rosemary1 tsp salt
Preheat the oven to 400 degrees. Cut up the potatoes and place in a bowl. Toss with olive oil, lemon juice, garlic, rosemary, and salt, so the potatoes are coated. Transfer the mixture to a roasting pan or dish, and put in the oven for 40 minutes. Makes 4 servings.
