Apple Butter Pork Tenderloin with Mustard Cream Sauce

Ingredients
1 M&M Apple Butter Pork Tenderloin1 Tblsp. Olive Oil1 Tblsp butter1 Cup Diced Onion2 Small Apples, peeled, cored and diced1/2 cup White wine or Apple Juice ( or a mixture of both)1/4 cup water (if needed or add more wine)1 Cup Heavy Cream8 dried prunes coarsly chopped1 Tblsp. Whole Grain Mustard
Directions
Yields aproximately 4 -6 servings:

In a Heavy bottomed pan, Brown pork on all sides in butter and oil on Medium Heat.
Remove from pan and reserve on plate.
Add onions to the pan and cook on medium heat for 2-3 minutes.
Deglaze the pan with the white wine or apple juice and scrape the bottom of the pan to include the brown bits in sauce.
Add diced apples and chpped Prunes, cook for 5 - 8 minutes.
Add 1/4 Cup of water or wine if needed and cook an additional 2 minutes more.
Add Cream and Mustard - Mix well.

Cut the pork in slices and place in sauce and cook on medium heat untill done. Aproximately 15 - 20 minutes.

Arrange sauce on bottom of serving dish and Arrange pork slices decoratively on sauce. Drizzle some sauce over pork slices.
Serve & Enjoy

Goes really nice with Herb Roasted Potatoes or served on a bed of rice or pasta.
