Southwest Chowder

Ingredients
1 TBSP olive oil1 medium onion4 cloves garlic12 oz. canned chicken breast, drained1 tsp cumin, 1 tsp chili powder15 oz. can pumpkin15 oz. can diced tomatoes8 oz. can chilies1 cup frozen corn, heaping1 small jar salsa14 oz. can chicken broth14 oz. can coconut milkSea salt and fresh ground pepper15 oz. can black beans, drainedLime, optional1 tsp. dry sherry, optional
Directions
1. Sauté garlic and onion in olive oil in large saucepan.
2. Add all other ingredients, except for the lime.
3. Just prior to serving add fresh lime to brighten the flavor.

Each serving is approximately 2 cups. Serves 8.
