Carrot Apple Muffins (lactose free)

3/4 cup white flour3/4 cup whole wheat flour1 cup rolled oats1 1/4 cup brown sugar2 teaspoons baking soda1 tsp baking powder1 tsp salt2 tsp ground cinnamon3/4 cup soy milk2 eggs, beaten1 tsp vanilla extract2 oz applesauce2 cups shredded carrots2 apples, peeled, shredded1/2 cup raisins1 cup chopped walnuts
Preheat oven to 350. Grease muffin tin.
In large bowl, mix together dry ingredients. Add the milk, eggs, vanilla and applesauce. Mix until blended. Stir in carrots, apples and walnuts. Fill muffin cups 2/3 full with batter. Bake at 350 for about 25 minutes, or until a toothpick comes out clean.
