* 6 Eggs, Omega 3 large * Almond Breeze Almond Milk, Unsweetened Original, 4 oz * Cottage Cheese, 1% Milkfat, .5 cup (not packed) * Zucchini, .25 cup, sliced * Green Peppers (bell peppers), 0.25 cup, chopped * Peppers, sweet, red, raw, sliced, .25 cup * Shallots, 3 tbsp chopped * Mushrooms, fresh, .25 cup, pieces or slices * Spinach, fresh, 1 cup * Pepper, black, .5 tsp
Beat eggs, almond milk, pepper, and cottage cheese together. Put in greased casserole dish, drop chopped vegetables in. Top with chopped spinach.
Bake 350 for 20 minutes covered, or until set
