Adzuki Baked Beans

Ingredients
1 pound dry adzuki beans6 cups water (at least)1 cup finely diced onion1 tbsp olive oil1 tbsp minced garlic1 cup unsweetened applesauce1 tbsp molasses + 2 tbsp Steviva Blend OR 1/4 cup brown sugar1/2 cup tomato sauce1 tbsp dijon mustard1/2 tsp curry powder1/2 tsp sea saltblack pepperOPTIONAL:1/4 cup cooked, crumbled bacon
Directions
Bring beans and water to a boil for 15 minutes. Turn down to a simmer and cook for 2 hours or until tender.
Saute onion and garlic in olive oil.
Drain beans.
Put all the ingredients into a slow cooker and allow to cook for several hours, or put in a covered casserole and cook for at least one hour at 350 degrees.
