HCG Appropriate, Mushroom Gravy

Ingredients

* 2 PORTOBELLO MUSHROOM CAPS, diced without stems* 1 small to medium SHALLOT, minced* 2 Tbsp diced fresh THYME (or 1 tsp dried)* 1/2 tsp SALT* 1/2 tsp BLACK PEPPER* 1-2 cloves GARLIC, minced* 2 oz. DRY VERMOUTH* 3 cups CHICKEN BROTH
To a medium warmed skillet, add
* VEGETABLE OIL (I use Canola or Refined Coconut=not sweet) - IF you can have oil, OTHERWISE OMIT THIS AND USE 1 TBSP OF WATER
* PORTOBELLO MUSHROOM CAPS
* SHALLOT
* THYME
* SALT
* BLACK PEPPER
Saute until veggies are softened, then add
* GARLIC
Cook about 1 minute, then add:
* DRY VERMOUTH
Simmer while you:
* Whisk FLOUR into one cup of cold CHICKEN BROTH, then add this mixture to your pan
Stir over medium heat as sauce starts to thicken, then:
* Work in the rest of the broth. As you are stirring and tasting, add more spices if you like, until you have the flavor you want.
If you want a smooth gravy, blend with your regular or immersion blender and it's done! It's good on almost anything savory...
