Low Carb/Low Fat Apple Cinnamon Bread

1 1/2 cups all-purpose flour1 teaspoon ground cinnamon1/2 teaspoon baking soda1/2 teaspoon salt1/2 cup Egg Substitue1/2 cup Natural Applesauce1 cup Splenda1/2 teaspoon vanilla extract1 1/2 cups peeled and diced apples1/2 cup chopped walnuts (optional)
1. Preheat oven to 325�F (160�C). Grease 9 x 5 x 3-inch loaf pan; set aside.
2. In medium bowl combine flour, cinnamon, baking soda and salt; set aside.
3. In mixing bowl beat the eggs, oil, sugar and vanilla together, mixing well. Stir in flour mixture until just mixed. Fold in apples and walnuts and spoon into prepared loaf pans.
4. Bake for 1 hour and 15 minutes or until tested done when wooden pick inserted in center of loaf comes out clean. Cool 10 minutes in the pans before removing to cool on wire racks. Wrap tightly to store.
