GF Southwest Corn Muffins

1/4 cup butter + 1 tbsp for greasing muffin cups3/4 cup cornmeal1/2 cup corn flour1/2 cup sorghum1/3 cup sweet rice flour2 tsp guar gum2 1/2 tsp baking powder1 tsp sea salt1/4 cup raw cane sugar2 eggs, slightly beaten1 1/2 cups buttermilk1 14 oz can of sweet corn
Preheat oven to 350 degrees. Grease 12 muffin cups.
Combine all dry ingredients in a medium sized bowl. Add wet ingredients and corn. Mix well.
Divide among muffin cups and bake for 15-20 minutes.
