4 Chicken Thighs cut in bite size pieces (bone and skin removed )1/2 large Onion cut in slices1/2 Green Pepper, chopped Mixed Vegetables, frozen, 1 package (10 oz) Garlic powder, 2 tsp Pepper, black, 2 tsp Pepper, red or cayenne, 1 tsp Soy Sauce, 2 tbsp Egg, fresh, 1 large Whole Grain Brown Rice, 3 cup Olive Oil, 1 tbsp
Cook brown rice and set aside
Heat 1 tbsp of olive oil in wok
Add chicken, garlic powder and black pepper - stir fry until no longer pink in the middle
add onions and bell peppers - continue to stir fry until veggies are tender
add frozen vegetables and 1 tbsp soy sauce and stir fry until tender
add cooked rice - fold all ingrediants together
separate mixture to make whole in center of wok
scramble egg in separate bowl and pour in center of wok
scramble egg in wok until it starts to cook
fold all ingrediants so egg is cooked and mixed throughout
add remaining soy sauce and serve
makes approx. 5, 1.5-cup servings
