Oven Roasted Chicken & Potatoes

Ingredients
½ lb diced chicken breast meat1/3 c chicken broth(1 t dried thyme, 2 t olive oil, ¼ t salt,1/8 t pepper)½ lb potatoes, cubed½ medium yellow onion, quartered
Directions
Combine all ingredients in a sprayed baking
dish and cover. Bake 30 min @ 350. Remove
cover and bake 15 min more. Divide into 2
servings.
