Chili Relleno Casserole

Ingredients
1 egg1/3 cup 1% Milk1/3 cup flour 1/3 cup cornmeal12 ounces low fat cheddar cheese12 ounces poblano peppers (deseeded)1 medium red bell pepper (deseeded)1 medium onion1 lb lean ground beef1 taco seasoning packet4 ounces tomato sauce
Directions
1. Mix together egg whites, flour, cornmeal and milk.

2. Dice poblanos, bell pepper and onion. Cook on medium high for 7 to 10 minutes to soften.

3. Brown beef in skillet. Drain. Follow instructions of taco seasoning packet.

4. In a 9 by 9 (or 8 by 8) pan, layer half of beef, third of cheese, half of peppers, repeat. Then top with flour mixture. Cover with tomato sauce and remaining cheese.

5. Bake uncovered for 75 minutes at 350 degrees.
