Baked Falafel

Ingredients
1 15 ounce can garbanzo beans1 small onion, finely chopped2-3 garlic cloves, finely chopped3 tablespoons fresh parsley, chopped1 tablespoon fresh cilantro, chopped1 teaspoon lemon juice1 teaspoon olive oil1 teaspoon coriander1 teaspoon cumin1/2 teaspoon dried red pepper flakes2 tablespoons flour1 teaspoon baking powderSalt and pepper to taste
Directions
Preheat oven to 375 degrees. Drain and rinse the garbanzo beans. Put in a medium sized bowl and smash with a fork. Add the rest of the ingredients and mix well. Form into small balls, about 1 1/2″ in diameter and slightly flatten. Place onto an oiled baking pan.

Bake for 15 minutes on each side, until nicely browned (since it’s baked, only the part actually touching the pan will be browned and crispy).

Serve with mini pita pockets, hummus, tahini sauce, tomatoes, lettuce and/or cucumber. (not in the nutritional info)

    Just made this recipe for lunch! I made a third of the recipe so that I could have a personal serving and cooked them less. It made 4 falafels for 160 calories! I put them in a small pita with hummus. DELICIOUS! - 7/6/15

    The flavor was very good. I made them in the food processor. I thought that they were very soft when done, but that didn't stop us from devouring them all. Served them with a pita and taziki, red onions, cucumber and bean sprouts. Will be making again. - 2/20/12

    I tried this today for lunch, it was great. I created little patties by pressing into 1/4 cup measure. I ate two patties and froze the rest. I added eggbeaters and used whole wheat flour. Very nice, thanks for posting the recipe! - 9/24/11
