Feta and Black Bean Tostadas

2 cups Refried Black Beans 8 Corn Tortillas2 tbls. Canola Oil2 cups torn Red Leaf Lettuce 2 cups Cherry Tomatoes sliced in half 1 cup crumbled Feta CheeseSliced Avacado (optional)
1. Prepare Refried Black beans and keep warm in
sauce pan.
2. Prepare Lettuce and tomatoes and any additional
toppings you may wish to add to this recipe ie avacados.
3. In hot oil,fry corn tortilla and turn.
4. Remove when crisp and place on butcher paper or paper towel to cool slightly.
5. Place heaping spoonfull of black beans on cooked tortilla and spread to near edge. Top with lettuce, Feta cheese and Tomatoes.
6. Make each Tostada individually or Family members may wish to top their own plain black bean tostadas by offering bowls of toppings at the table or buffet style.
Serve with tobasco or sriracha sauce (optional)
Avacados are also a great topping for these but are not included in the calorie and nutritional info of this recipe.
