Mac n Cheese (TOH big book)

Ingredients
2 cups uncooked macaroni3 Tbsp Butter3 Tbsp. Flour1 1/2 cups Milk1/4 tsp. Salt1/4 tsp. Pepper4 oz. Cheddar cheese, shredded2 oz. low fat Velveeta2 Tbsp. Bread crumbs (optional)1 Tbsp. butter, melted (optional)
Directions
Preheat oven to 375. Spray a 9x9" pan.
Prepare macaroni according to directions.
Meanwhile, melt butter, add flour, salt and pepper- stir until smooth. Gradually add milk.
Cook on medium heat, stirring, until it starts to thicken. Add the cheese, stirring until cheese is melted.
Drain macaroni. Put into prepared dish. Pour cheese sauce over and mix well.
Mix together bread crumbs and melted butter and sprinkle on top (this is good but not added into calorie count)
Bake, uncovered, for 30 minutes or until heated through. if using topping, it will turn golden brown.
