Cheesy Creamy Shrimp & Grits

1/4 cup old fashioned grits1/2 cup chicken broth3 oz. water1/4 cup real goodness nonfat milk1/8 cup shredded taco cheese10 - 12 medium raw shrimp, peeled and deveined1 tblsp. hot sauce1 tblsp. worchestire sauce1/2 lime, juiced4 tsp. cajun seasoning1/2 tsp. black pepper, divided1 tsp. salt, divided1/4 cup finely chopped baby carrot1/4 cup finely chopped celery1/4 cup finely chopped onion1/4 cup finely chopped green pepper1 small clove garlic1/2 medium tomato1 tblsp. olive oil2 tsp. margarine
Place shrimp in bowl, sprinkle with cajun seasoning, lime juice, 1/4 tsp. salt, 1/8 tsp pepper, hot sauce and worchestire sauce. Place in fridge to marinate while preparing rest of meal.
Bring chicken broth, water, and milk to boil. Add 1/2 tsp. salt and 1/8 tsp. pepper. Whisk in grits slowly to prevent sticking. Cover and turn to low. Cook 12 - 15 minutes stirring every few minutes. If too thick, add additional chicken broth to thin. When thoroughly cooked, stir in cheese. Cover and remove from heat.
While grits are cooking saute carrots, celery, and onion in small frying pan 5 minutes. Add green pepper, cook till soft. If becomes too brown, add chicken broth to pan. Add garlic and shrimp. Cook till pink. Just before shrimp is done add tomatoes.
Place grits in bowl, pour shrimp mixture over top. Salt to taste.
