Ingredients
1 lb Grilled Chicken Strips (precooked)1 medium Red Onion Diced1 large Red Bell Pepper ( can use any color)1/2 cup Salsa ( You decide temperature, hot medium or mild)1 cup Uncooked Brown Rice.Spritz of Pan Spray
Directions
Cook rice according to directions. Chop pepper and cut onion into strips. Spray heavy pan with cooking spray cook chicken until thoroughly heated. Now add onion and pepper and cook for another ten minutes. Turn off heat and stir in salsa. Serve with or over the rice. Suggestions for accompaniments are refried bean and tortillas. Recipe makes 4 servings.
