Turkey & Veggie Meatloaf Minis

Ingredients
1 small onion¼ c plus 3 T ketchup, divided1&1/4 lbs lean ground turkey3 c bagged dry broccoli coleslaw, roughly chopped½ c fat-free liquid egg substitute½ c quick-cooking oats2 tsp garlic powder1 tsp salt
Directions
Preheat oven to 350 degrees.

Chop or grate onion.
Add ¼ cup ketchup and all other ingredients.
Stir until thoroughly mixed.

Spray 12- cup muffin pan with nonstick spray.
Evenly distribute turkey mixture among muffin cups and top each with 1 teas ketchup.

Bake for 30-35 min, until firm with lightly browned edges.
Let stand for 5 min before serving.
