Delicious Low-Fat Meatballs!

Ingredients
1 small eggplant1/4 small onion1 garlic clove1 large egg white12 ounces ground chicken, or italian chicken sausage1/8 cup shredded parmesan cheese1/4 cup rolled oats
Directions
1. Heat the oven to 350 degrees.

2. Place the eggplant on the grate of a gas burner over a high flame. Char the eggplant, turning occasionally, until the skin is charred. Allow to cool slightly, then cut in half. Scrape out the flesh, discarding the skin. Measure 1/4 cup of the flesh; reserving the remaining eggplant for later use.

2. In a food processor, combine the onion, garlic, eggplant and egg white. Puree until smooth. In a large bowl, combine the pureed mixture with the ground chicken, parsley, oats, and 2 tablespoons of the parmesan.

3. Roll the mixture out into 12 portions, and place on a cookie sheet, lined with aluminum foil and sprayed with cooking spray. Bake about 25 minutes, or until firm to the touch.

Use with your favorite marinara sauce and whole wheat spaghetti!!!!!
