Vegetable Stew

Ingredients
1/8 t salt1/8 t pepper1 sweet yellow onion2 cloves garlic1 t ground cumin1 t coriander½ t ground cinnamon½ t turmeric¼ t cayenne1 c cauliflower florets1 c carrots1 c vegetable broth1 red bell pepper, thinly sliced1 zucchini, cut into 1” chunks1 can garbanzo beans2 14.5 oz cans diced tomatoes
Directions
Sauté onion and garlic. Stir in cumin, coriander, turmeric, cinnamon, and cayenne and cook for about a minute. Add broth, cauliflower, and carrots. Simmer, covered for about 10 minutes. Stir in bell pepper, zucchini, garbanzo beans, and tomatoes and simmer for another 10 minutes.
