Curried Cauliflower Soup

1 head cauliflower, chopped into 1 inch pieces3 Cups reduced sodium beef broth (I used No name)3 Cups water2 tablespoons Curry Powder1 tablespoon butter (I only had salted in the house, unsalted will work great and reduce the sodium too!)3 cloves garlic, mincedSalt & White Pepper to taste
Melt butter in a large soup pot. Soften garlic in butter, but do not let it brown (this should only take 45 sec - 1 min). Add cauliflower, beef broth and water. Bring to a boil. Add the curry powder and continue to boil for 10 minutes. Reduce to a simmer for 45 minutes, stirring occasionally. Carefully ladle soup into a blender and purrée in batches. Return purréed soup to pot and bring back to a boil. Serve hot.
Variations:
You can also soften some yellow onion along with the garlic, or add or reduce curry powder if you like it hotter/milder.
