Stir-Fry Tofu

Ingredients
16oz firm tofu 1tbsp olive oil 1/2tsp dijon mustard 2medium garlic cloves , peeled 4tbsp low sodium soy sauce 1tsp sweetener (sugar substitute) 1cup cold water , hot 1pinch salt and pepper
Directions
1 Cut tofu into small cubes and brown in oil, using a non-stick skillet.
2 Combine remaining ingredients and pour over tofu.
3 Simmer until all the liquid is absorbed. Correct seasoning to taste.
Additional Information
Add 1 tbsp chicken or vegetable soup powder to the skillet for added flavor, if desired
